| For the last few years it's been just me. I owe a lot to this little fruit. 24 years ago, as a young man growing up in Miami, I began making key lime pies for my family and friends. Along the way have I grown to appreciate the wonderful flavor and culinary richness that the key lime adds to my plate. And now, I am fortunate enough to be able to sustain myself by sharing this appreciation with others of similar tastes. My intentions here at www.keylime.com are to provide the visitors with as much information about key limes, without throwing commerce (or pies) directly in your face. In fact, my companion site, www.StevesAuthentic.com will be devoted to the commerce portion of what I am doing, independent of www.keylime.com. | ||||||||||

For the first four years I had been working from a studio apartment. In January of 1999, I moved into a shared bakery which I had outgrown in just 18 months. In March of 2001, we moved into a newer, larger facility so that I can keep up with the demand and continue my commitment to recreating the real thing, an AUTHENTIC key lime pie. But even as demanding as the work is, I am constantly working at keeping this site up to date. We look forward to your comments and questions, and as difficult as it is at times to answer all the incoming inquiries, somehow we do manage. Our mailing list offers updates on the site, notification of newly posted recipes, horticultural updates and information on product additions and shipping. Whether a professional chef, avid home cook, gardener or fan of all things key-lime, we think you will enjoy what we have managed to put together for you. if you care to. For a more detailed history about the beginnings of Steve's Authentic, the how and why I began making key lime pies in the first place, there is a more detailed offering on the other site. |

| If you happen to see me tooling around the City in the Keylime Express, give a shout. If I have any samples onboard, I'll be happy to share one with you. Quite often I have a few extra pies with me as well, so just ask. |

Here's
a look at one of the 4 1/2" minis, which we began making at the request
of the St. Regis Hotel for their banquets. This one is garnished with
fresh whipped cream, raspberry puree, berries and mint. Yummy! |
